Limoncello

  • 15 lemons – smooth skin lemons are best
  • 2 bottles of 100 proof vodka (1 litre bottles)
  • 4 cups of sugar
  • 5 cups of vodka (they say water but if there is too much water the limoncello will freeze when in the freezer and alcohol will not)

Step 1

Peel the lemons making sure to get the peel only – I use a potato peeler and the lighter you peel the better as you get more peel and less pith.

Add the bottle of vodka and leave to sit in a container – we have used a plastic container with a lid and put it in a cupboard.

Let sit for 30 – 40 days in a cool, dry place with no sunlight.

Step 2

Combine sugar and vodka in a pan and cook until thickened to make a syrup. Let this cool and add it to the limoncello mixture.

Add in the additional bottle of vodka.

Let sit for 30 – 40 days in a cool dry place with no sunlight.

Step 3

When done aging, strain out the lemon peel and bottle the limoncello. It is easiest to save old glass bottles and clean them thoroughly before bottling.

Keep the limoncello in the freezer and serve icy cold.
