Banana Crunch Cake

  • 4oz Butter
  • 1 cup sugar
  • 2 eggs
  • 1 cup mashed banana
  • 1 tsp vanilla essence
  • 2 ¼ cups selfraising
  • flour
  • ½ tsp baking soda
  • 6 Tb water

Method

Cream butter and sugar. Add eggs and beat well. Stir in banana and vanilla essence. Sift in flour and soda and mix carefully. Stir in water and mix well.

Turn out into greased tin.

Topping
  • 3 Tb chopped walnuts
  • 3oz soft butter
  • 3 Tb selfraising
  • flour
  • 3 Tb sugar
  • 1 ½ tsp cinnamon

Mix all ingredients well and spread over cake mixture.

Bake at 180°C for 40-50 minutes.
