Toasted Muesli

  • 200g rolled oats
  • 150g mixed nuts (e.g: hazelnuts, almonds, walnuts, brazil nuts)
  • 50g mixed seeds (e.g:sunflower, pumpkin, sesame)
  • 50g coconut
  • 1 tsp ground cinnamon
  • 150g dried fruit (e.g: raisins, pineapple, apricots, strawberries)
  • 5 Tbsp maple syrup or runny honey
  • 5 Tbsp olive oil

Method

Put all dry ingredients, excluding the fruit, on a baking tray, stir well and smooth out.

Drizzle with the syrup and olive oil and mix through well.

Cook in oven at 180 degrees. Every 5 minutes take the tray out of the oven, stir well then smooth out again before returning - keep doing this until you get to the golden/toasted colour you like. (It takes 20 minutes in my oven).

When toasted add the chopped up dried fruit, mix in and leave to cool.
